Recipe: Cajun-spiced cod with black bean, tomato & avocado salad
For two, you will need:
- 2 fillets of cod (approx. 220g each) or use a chicken breast per person
- 1 tbsp Cajun seasoning (we used Barts from the supermarket)
- 2 limes
- 1 avocado (diced)
- 1 tin of black beans
- 1 punnet cherry tomatoes (halved)
- 1 mild chilli (deseeded and chopped)
- A handful of soft herbs, chopped (whatever you have growing in the window box)
- Salt & pepper
- Olive oil
- Place the cod on a baking tray and drizzle with olive oil
- Sprinkle the fillets with a tbsp of Cajun spice mix and half a lime squeezed, salt and pepper over them
- Bake in 190c oven for approx. 10-12 minutes or until just cooked through
- In a bowl add drained black beans, halved tomatoes, chilli, avocado, a good glug of olive oil, chopped herbs and the other half of the lime squeezed, salt and pepper and mix. (if you want to warm this do so in a pan for a few minutes)
- You can add an abundance of vegetables to this salad – go wild mix it up.
Serve the cod on top of the beans with a few more chopped herbs and a half lime to squeeze
